Flaked rice also known as rolled rice is commonly used in brewing to lighten the body of a beer and increase its alcohol content. It is often used in light lagers, American and Japanese rice beers, and some Belgian styles.

Flaked rice is added to the mash up to 20% of the grist along with other grains to provide additional fermentable sugars and reduce the protein content of the final beer, resulting in a cleaner and crisper taste. Additionally, it can contribute to a light and fluffy mouthfeel, as well as improving the head retention and clarity of the beer. 

Flaked rice is not malted so does not have the enzymes to convert starch to sugar.
