Clean, Authentic German Lager Yeast

LalBrew Diamond Lager is a true lager yeast selected for producing clean, crisp and highly drinkable beers with an authentic European lager character.

Originating in Germany, this reliable strain provides strong fermentation performance with a neutral flavour profile that allows delicate malt and hop characters to shine. It is an excellent choice for German Pilsner, Munich Helles, Märzen, Bock and many other traditional lager styles.

Diamond Lager produces high attenuation with good flocculation, helping create a dry, clean finish and clear finished beer when given suitable fermentation time and temperature control.

Fermentation Profile

  • Species: Saccharomyces pastorianus

  • Recommended temperature: 10–15°C

  • Attenuation: High

  • Flocculation: High

  • Fermentation character: Clean, crisp and neutral

  • Sachet size: 11g

For the cleanest traditional lager character, ferment toward the lower end of the recommended temperature range. Fermentation toward the warmer end can provide a faster result while retaining a relatively clean profile.

How to Use LalBrew Diamond Lager Yeast

Sprinkle the yeast directly onto the surface of well-aerated wort or rehydrate it according to the manufacturer's instructions before pitching.

For traditional cold lager fermentation, use approximately two 11g sachets in 20–23 litres of standard-strength wort. A single sachet may be suitable for a low-gravity batch fermented toward the upper end of the temperature range, although fermentation may begin more slowly.

Maintain a stable fermentation temperature and allow sufficient time for the yeast to finish fermenting before chilling and lagering the beer.

Does Diamond Lager Yeast Need to Be Rehydrated?

Diamond Lager can be sprinkled directly onto the wort. Rehydrating the yeast before pitching may provide the best possible yeast viability, particularly when fermenting cold or brewing higher-gravity lagers.

How Many Sachets Do I Need?

For a typical 20–23 litre lager fermented at traditional lager temperatures, two sachets are recommended. Cold wort and higher original gravity increase the number of healthy yeast cells required.

One sachet may ferment a lower-gravity beer at approximately 14–15°C, but it may have a longer lag phase than a larger pitch.

Does Diamond Lager Need a Diacetyl Rest?

A diacetyl rest can help ensure a clean finish. When fermentation is approaching final gravity, allow the beer to rise gradually to approximately 16–18°C for two or three days before cold crashing and lagering.

How Long Should I Lager the Beer?

After fermentation and a suitable diacetyl rest, gradually chill the beer and lager it cold. Two to four weeks of cold conditioning will improve clarity and smoothness, while stronger or darker lagers may benefit from additional time.
