Australian Heritage Rye Malt with Fresh Bread and Spicy Rye Character
Add distinctive Australian rye character to your beer with Voyager Heritage Rye Malt. Produced from heritage cereal ryecorn grown on local regenerative farms, this unique malt delivers earthy fresh-rye-bread aroma, toasty biscuit sweetness and a classic dry, spicy finish.
Its smaller, darker grain provides more distinctive character than many modern conventional rye varieties. Use it in Rye IPA, Roggenbier, Pale Ale, Red Ale, Porter, Stout and farmhouse beer—or add a small percentage to bring complexity to almost any grain bill.
With a pale 4–8 EBC colour, excellent extract and strong enzymatic performance, Voyager Heritage Rye adds substantial flavour without significantly darkening the finished beer.

Brewing Tips
Use approximately 5–10% of the grain bill to add subtle rye-bread flavour, gentle spice and additional grain complexity to Pale Ale, IPA, Red Ale, Porter or Stout.
Use approximately 10–20% in Rye Pale Ale and Rye IPA for a clearly noticeable spicy rye character without allowing it to dominate the beer.
Use approximately 20–30% when a strong rye-bread flavour and fuller texture are desired. Higher percentages can be used in traditional Roggenbier, but require careful lautering and recipe adjustment.
Rye does not have the husk structure of malted barley and contains beta-glucans that can create a sticky mash. Voyager recommends adding rice hulls or oat hulls when using more than 10% Heritage Rye to improve grain-bed permeability and reduce the risk of a stuck sparge.
Heritage Rye has small kernels. If milling it separately, use a tighter mill gap than you would normally use for malted barley and check that the kernels have been properly crushed.
Its strong enzymatic performance allows reliable starch conversion, although it is normally mashed with a barley base malt such as Voyager Compass, Atlas or Veloria.
A short beta-glucan rest at approximately 40–45°C may improve wort flow in recipes containing a particularly high percentage of rye.
Frequently Asked Questions
What is Voyager Heritage Rye Malt?
Voyager Heritage Rye is an Australian rye malt made from heritage cereal ryecorn grown on local regenerative farms. It contributes earthy rye bread, toasted biscuit and spicy flavours.
What is ryecorn?
Ryecorn is another name used for cereal rye. Voyager’s heritage ryecorn is a mix of older rye genetics with smaller, darker kernels and a more distinctive flavour than many modern conventional varieties.
What flavour does Heritage Rye add to beer?
It contributes earthy fresh-rye-bread aroma, toasty biscuit sweetness and a classic dry, spicy finish.
How much Voyager Heritage Rye should I use?
Use approximately 5–10% for subtle complexity, 10–20% for a noticeable rye flavour or 20–30% for a strong rye character. Larger additions are possible but require careful mash and lautering management.
What beer styles use Heritage Rye Malt?
It is ideal for Rye IPA, Rye Pale Ale, Roggenbier, Saison, Farmhouse Ale, Red Ale, Porter, Stout and rye-based distilling recipes.
Is Heritage Rye suitable for Roggenbier?
Yes. Its fresh rye-bread and spicy character is well suited to Roggenbier. Traditional recipes may use more than 30% rye, so rice hulls and careful lautering are strongly recommended.
Does Voyager Heritage Rye have enzymatic power?
Yes. It has strong enzymatic performance, with a listed diastatic power greater than 200°WK.
Does Heritage Rye need to be mashed?
Yes. It is a malted brewing grain that must be milled and mashed to convert its starches into fermentable sugars.
Does Rye Malt need a finer mill setting?
Usually, yes. Rye kernels are smaller and narrower than malted barley. When milling separately, tighten the mill gap and check that the kernels have been properly crushed.
Do I need rice hulls when brewing with Heritage Rye?
Voyager recommends adding rice or oat hulls when Heritage Rye exceeds 10% of the grain bill. Rye can create a sticky mash and slow wort run-off.
What is the difference between Rye Malt and Crystal Rye?
Heritage Rye is a pale enzymatic malt with fresh bread, biscuit and spicy flavours. Crystal Rye is darker, sweeter and contributes more caramel, dried-fruit and toasted flavours with little or no useful enzymatic activity.
What can I substitute for Voyager Heritage Rye?
Weyermann Rye Malt Pale or another pale rye malt can be used as an alternative. The finished beer may have a cleaner and less distinctive heritage-grain character.
