Ultra-Light German Pilsner Base Malt

Brew exceptionally pale, bright and crisp beer with Weyermann® Extra Pale Premium Pilsner Malt. Produced in Bamberg, Germany from carefully selected brewing barley, this premium base malt is specially malted to produce an extremely light wort and exceptionally pale finished beer.

With a colour range of just 2–3.5 EBC, it is lighter than standard Weyermann Pilsner Malt while retaining a clean, malty-sweet flavour with delicate honey notes. Its restrained malt profile provides an ideal foundation for showcasing subtle yeast character, noble hops and modern aromatic hop varieties.

High extract and strong enzyme activity allow Weyermann Extra Pale Premium Pilsner Malt to be used at up to 100% of the grain bill. Brewing Tips

Use Weyermann Extra Pale Premium Pilsner Malt at up to 100% of the grain bill for German Pilsner, Helles, Kölsch-style beer, Blonde Ale and other exceptionally pale beers.

For Japanese, Mexican or American-style lager, its high enzyme activity makes it an excellent base for recipes containing rice or corn. Ensure adjuncts are properly prepared for mashing unless using pre-gelatinised products.

Mash around 63–65°C when aiming for a highly fermentable wort and a crisp, dry lager finish.

Mash around 65–67°C when slightly more body and malt balance are desired in Helles, Blonde Ale, Belgian ale or other pale styles.

Use a well-controlled, uncovered boil to drive off unwanted volatile compounds when brewing with very lightly kilned Pilsner malt.

Its delicate flavour makes water chemistry particularly noticeable. Soft, low-alkalinity brewing water generally suits pale lagers, although mineral additions should always be adjusted for the intended beer style.
