Pregelatinised Flaked Corn for Crisp Beer and Distilling Washes

Produce lighter, drier and more refreshing beer with Briess Flaked Corn. Also known as flaked maize, this pregelatinised cereal adjunct contributes fermentable extract while reducing the heavy malt character, colour and body associated with an all-barley grain bill.

Briess Flaked Corn provides a mild fresh-corn flavour and helps produce a clean, crisp finish with excellent drinkability. It is ideal for American Light Lager, Mexican Lager, Cream Ale, Pre-Prohibition Lager and other light beer styles.

Because the starch has already been gelatinised, the flakes can be added directly to the mash without milling, pre-cooking or using a separate cereal cooker. Briess recommends additions of up to 40% of the total grain bill.

Flavour Profile

Briess Flaked Corn provides a mild fresh-corn flavour while reducing the intensity of the barley malt character. At moderate usage rates, its flavour contribution is subtle and primarily supports a lighter colour, drier finish and greater drinkability.

Higher additions can produce a more noticeable sweet-corn or cornflake character, which is appropriate in styles such as Mexican Lager and historic American Lager.

Colour Contribution: Extremely pale
Flavour: Mild, fresh corn
Aroma: Subtle corn and cereal grain
Body Contribution: Lightens the finished beer
Finish: Dry, crisp and refreshing
Enzyme Activity: None

Brewing Tips

Add Briess Flaked Corn directly to the mash with the malted grain. The flakes are pregelatinised and do not require boiling or cooking in a separate cereal cooker.

Do not mill the flakes. Milling is unnecessary and may cause the soft flakes to stick to the mill rollers.

Use approximately 5–15% of the grain bill for a subtle reduction in malt flavour, colour and body.

Use approximately 15–30% in Cream Ale, Mexican Lager and American-style lager recipes for a cleaner, drier finish and more noticeable corn contribution.

Briess recommends additions of up to 40% of the total grain bill.

Flaked corn has no enzymes of its own and must be mashed with sufficient enzymatic base malt, such as Pilsner, Pale Ale or high-diastatic-power lager malt.

At higher usage rates, consider adding rice hulls to maintain a permeable grain bed and support efficient wort drainage.

Frequently Asked Questions

What is Briess Flaked Corn?

Briess Flaked Corn is pregelatinised, degermed yellow corn prepared for brewing and distilling. It adds fermentable extract while producing a lighter colour, milder malt flavour and drier finish.

Is flaked corn the same as flaked maize?

Yes. Corn and maize refer to the same cereal grain. “Flaked maize” is the term commonly used by British and Australian brewers, while “flaked corn” is more common in North America.

Does flaked corn need to be cooked?

No. Briess Flaked Corn is already pregelatinised, so it can be added directly to the mash without pre-cooking or using a cereal cooker.

Does flaked corn need to be milled?

No. Add the flakes directly to the mash without milling.

What flavour does flaked corn add to beer?

It contributes a mild fresh-corn flavour. At moderate usage rates, its main effects are reduced malt intensity, lighter colour and a drier, crisper finish.

How much flaked corn should I use?

Use around 5–15% for a subtle effect or 15–30% for light lagers, Mexican Lager and Cream Ale. Briess recommends a maximum of 40% of the total grain bill.

Does flaked corn contain enzymes?

No. Flaked corn has no enzymatic activity and must be mashed with sufficient enzymatic base malt to convert its starches into fermentable sugars.

Can flaked corn be steeped by extract brewers?

Steeping alone will not properly convert its starches. Extract brewers should perform a partial mash with an enzymatic base malt if using flaked corn.

Is flaked corn suitable for distilling?

Yes. It can be mashed with malted barley or suitable enzymes when producing corn-based and bourbon-style grain washes. Its pregelatinised starch does not require a separate cereal cook.

Is Briess Flaked Corn gluten-free?

Corn is naturally gluten-free. However, this product may be packed or processed around gluten-containing grains, and beer brewed with barley malt is not gluten-free.
