Weyermann Melanoidin Malt contributes pronounced honey, biscuit and rich malt flavours while producing an attractive amber to deep red colour. It is particularly effective in malt-forward lagers and ales where a concentrated malt character is desired without adding roasted flavours.

Often used by brewers to create some of the rich malt depth associated with traditional decoction-mashed beer, Melanoidin Malt is ideal for Märzen, Vienna Lager, Munich Dunkel, Bock, Irish Red Ale, Altbier, Belgian Dubbel and Red IPA.

Brewing Tips

Use approximately 2–5% of the grain bill to add subtle honey, biscuit and toasted malt complexity without dominating the beer.

Increase to around 5–10% in Märzen, Vienna Lager, Irish Red Ale, Altbier and Amber Ale for a more pronounced malt profile and deeper reddish colour.

Use approximately 10–20% in Bock, Doppelbock, Munich Dunkel, Belgian Dubbel and other intensely malt-forward beers where rich malt flavour is a defining feature.

Weyermann recommends additions of up to 20%.

Melanoidin Malt has only low enzyme activity, so it should be mashed with an enzymatically active base malt such as Pilsner, Pale Ale, Vienna or Munich malt.

It can help produce some of the rich honey, biscuit and toasted malt complexity associated with decoction-mashed beer. However, it does not completely reproduce the flavour or process effects of an actual decoction mash.

Use it carefully in lighter or hop-forward beers, as excessive additions can produce an overly heavy malt flavour and sweetness.
