Its high diastatic power makes it suitable for grain bills containing significant quantities of raw corn, wheat, rye, rice and other unmalted grains. The required percentage will depend on the quantity and type of adjuncts used, so allow sufficient malt to achieve complete starch conversion.
For a highly fermentable distilling wort, mash at approximately 63–65°C. This encourages the production of fermentable sugars and supports a higher potential spirit yield.
Raw cereal grains may require cooking or gelatinisation before the malt enzymes can access their starch. Flaked and pre-gelatinised grains can generally be added directly to the mash.
