Use approximately 3–8% of the total grain bill for subtle red highlights, gentle caramel flavour and additional malt complexity.
Use approximately 8–15% in Irish Red Ale, American Red Ale, Vienna Lager and Red IPA when a more noticeable orange-red colour and caramel character are required.
Higher additions of approximately 15–25% can create a fuller caramel profile in strongly malt-driven recipes. Weyermann recommends a maximum addition of 25%.
For a deeper red colour, combine CARARED with a small, carefully measured addition of Weyermann Melanoidin Malt. Too much dark crystal or roasted malt can push the finished beer from red towards brown.
