What Else Do I Need?

To make a standard 23-litre batch, you will also need:

  • 1kg Booster Brew Enhancer, Ultra Blend, dextrose or malt extract

  • Clean brewing water

  • Fermenter and airlock

  • Hydrometer

  • Brewing cleaner and sanitiser

  • Bottles or a keg

  • Carbonation drops or measured priming sugar when bottling

For a balanced Australian-style lager, we recommend using Border Brewing Supplies Booster Brew Enhancer 1kg.

Which Brew Enhancer Should I Use?

Your choice of fermentable will affect the body, flavour, head retention and alcohol content of the finished beer.

Booster Brew Enhancer 1kg — Recommended

Border Brewing Supplies Booster contains:

  • 500g dextrose

  • 250g maltodextrin

  • 250g light dried malt extract

This balanced blend increases alcohol content while improving body, malt flavour and head retention. It is the best all-round choice for keeping the lager light and refreshing without producing a thin finished beer.

Ultra Blend 1kg

Border Brewing Supplies Ultra Blend contains:

  • 500g dextrose

  • 500g light dried malt extract

Choose Ultra Blend when you want more malt flavour, greater body and a fuller mouthfeel. It will produce a slightly richer lager than Booster.

Light Dried Malt Extract

Using 1kg of light dried malt extract produces the fullest malt flavour and body.

This option makes a richer, more substantial beer and may finish slightly sweeter than a batch brewed with Booster or dextrose.

Dextrose

Using 1kg of dextrose produces a lighter-bodied beer with a drier finish.

This is the most economical option, but the finished beer will generally have less malt flavour, body and head retention than a beer made with Booster or Ultra Blend.

Best-Practice Brewing Instructions

Thoroughly clean your brewing equipment and sanitise every surface that will contact the cooled wort or finished beer.

Place the unopened can in hot water for approximately 10 minutes to soften the malt extract.

Add the contents of the can to a sanitised fermenter with approximately 2 litres of hot water. Add 1kg Booster Brew Enhancer or your selected fermentable and mix until completely dissolved.

Top up with cool water to approximately 23 litres and mix thoroughly. Take an original gravity reading with a sanitised hydrometer.

Choose one of the following yeast and fermentation options.

Option 1: Use the Supplied Coopers Yeast

Cool the wort to approximately 18–20°C before adding the yeast.

Sprinkle the included yeast evenly over the wort surface and maintain a stable fermentation temperature of approximately 18–20°C.

The included sachet is supplied by Coopers for one 23-litre batch. Fermenting near the lower end of its operating range will generally produce a cleaner result than fermenting at 24–27°C.

Option 2: Use a Clean Ale Yeast

For a stronger pitching rate and clean warm fermentation, replace the supplied yeast with one fresh 11–12g sachet of neutral ale yeast.

Pitch and ferment at approximately 17–20°C, following the yeast manufacturer’s directions.

This is a practical option when you want a clean lager-style beer but cannot maintain traditional lager fermentation temperatures.

Option 3: Use a Traditional Lager Yeast

For a more authentic lager fermentation, replace the supplied yeast with two fresh 11–12g sachets of lager yeast.

Chill the wort completely to the yeast’s recommended pitching temperature—generally 10–13°C—before adding the yeast. Do not pitch warm and gradually cool the fermenter.

Aerate the wort thoroughly before pitching and maintain a stable fermentation temperature according to the yeast manufacturer’s instructions.

When fermentation is approximately 2–5 gravity points from the expected final gravity, allow the temperature to rise gradually to approximately 15–18°C for a diacetyl rest.

Once fermentation is complete, gradually cool the beer and cold-condition it at approximately 0–4°C for two to four weeks before packaging.

Fermentation Best Practice

For the best finished beer:

  • Measure the wort temperature rather than the surrounding room temperature

  • Maintain a stable fermentation temperature

  • Use an appropriate quantity of fresh yeast

  • Aerate the wort thoroughly before pitching

  • Keep the fermenter closed once fermentation begins

  • Avoid splashing or unnecessary transfers after fermentation

  • Confirm completion with stable hydrometer readings

  • Never bottle according to time or airlock activity alone

Fermentation is complete only when the specific gravity remains unchanged over at least two consecutive days.

What Alcohol Percentage Will It Make?

When brewed to 23 litres with 1kg of Booster, Ultra Blend, dextrose or malt extract, the finished beer will generally be around 4–4.5% ABV after bottle conditioning.

The actual alcohol content depends on the chosen fermentable, finished volume and final gravity.

Use the original and final hydrometer readings to calculate the alcohol content accurately.

Is Yeast Included?

Yes. A Coopers brewing yeast sachet is located underneath the plastic lid.

The included yeast is intended to produce reliable results without requiring traditional cold lager fermentation. For a cleaner finished beer, maintain a stable fermentation temperature of approximately 18–20°C.

Can I Use Lager Yeast Instead?

Yes. Replacing the supplied yeast with a dedicated lager yeast will produce a cleaner and more traditional lager fermentation profile.

For a 23-litre batch fermented at approximately 10–13°C, use two 11–12g sachets of dry lager yeast unless the yeast manufacturer specifies otherwise.

Suitable options include:

  • LalBrew NovaLager

  • Lallemand Diamond Lager

  • Fermentis SafLager W-34/70

Always follow the selected yeast manufacturer’s pitching-rate and temperature recommendations.

How Long Does Fermentation Take?

With the supplied yeast at 18–20°C, primary fermentation will commonly take approximately 7–10 days, followed by additional conditioning time.

Traditional lager fermentation at 10–13°C may take 10–14 days or longer, followed by a diacetyl rest and cold conditioning.

These times are estimates only. Package the beer only after the gravity remains stable over at least two consecutive days.

How Long Should It Condition?

When bottling, allow at least two weeks at an appropriate conditioning temperature for carbonation to develop.

The beer can be consumed once carbonated, but several additional weeks of cool conditioning will generally produce a smoother, cleaner and more integrated flavour.

Is This Kit Suitable for Beginners?

Yes. Coopers Lager is a straightforward malt extract beer kit that does not require grain mashing or wort boiling.

The simplest method is to combine it with Booster Brew Enhancer, use the included yeast and maintain a stable fermentation temperature of approximately 18–20°C.

Brewers with temperature control can upgrade the kit with a dedicated lager yeast and cold-condition the finished beer for a more traditional lager result.
