Caster sugar (superfine sugar) is used for its fine crystals, which dissolve quickly and easily, making it ideal for baking delicate cakes and meringues, sweetening drinks and cocktails, and for quick-dissolving needs in mousses and whipped cream. Because it integrates easily into batters, it creates a tender, airy texture in baked goods and is suitable for sweetening both hot and cold beverages without a gritty residue. 

Sunshine Sugar owns and operates sugar mills at Harwood (near Yamba), Broadwater & Condong (Tweed River)

The sugar cane is grown locally here in the Northern Rivers NSW
