Fermentation Nitrogen for Healthy Yeast Activity

Diammonium Phosphate, commonly known as DAP, is a concentrated source of inorganic nitrogen and phosphate for yeast during fermentation.

DAP yeast nutrient is particularly useful in low-nitrogen fermentations such as wine, cider, mead, sugar washes, hard seltzer and some fruit-based ferments. Supplying sufficient nitrogen during the early stages of fermentation helps support yeast growth, fermentation activity and reliable attenuation.

Suitable Fermentation Applications

DAP can be used in:

  • Wine

  • Apple and fruit cider

  • Mead

  • Fruit wine

  • Sugar washes

  • High-adjunct or low-malt fermentations

  • Other fermentations with insufficient available nitrogen

Most all-malt beer wort already contains usable nitrogen from malt. DAP should therefore only be added to beer wort when the recipe, wort composition or fermentation conditions indicate that additional nitrogen is required.

Recommended Dosage

The correct amount depends on the fermentation type, yeast strain and existing yeast-assimilable nitrogen level.

For wine, cider and mead, a common starting range is:

  • 0.1–0.2g per litre

  • 2–4g per 20 litres

  • Approximately 2.3–4.6g per 23 litres

Use the lower end unless the recipe, yeast manufacturer or nutrient analysis indicates a greater requirement.

DAP is concentrated and should be weighed with an accurate digital scale. Avoid relying on spoon measurements.

How to Use DAP Yeast Nutrient

  1. Calculate the required dose for the fermentation volume and recipe.

  2. Weigh the DAP accurately using a digital scale.

  3. Dissolve it in a small amount of clean water, juice, must or wash.

  4. Add it before fermentation or during the early active-growth stage.

  5. Mix thoroughly while minimising unnecessary oxygen exposure after fermentation has begun.

For larger additions, staged dosing during the early part of fermentation may help moderate yeast activity and heat production.

Do not add DAP late in fermentation unless specifically directed by a validated recipe or fermentation protocol.

Is DAP a Complete Yeast Nutrient?

No. DAP supplies inorganic nitrogen and phosphate, but it does not provide the vitamins, minerals, amino acids, sterols and yeast-derived nutrients found in a complete fermentation nutrient.

For demanding or nutrient-poor fermentations, DAP may be used as part of a broader nutrient program alongside a suitable complete yeast nutrient.

Does Every Fermentation Need DAP?

No. DAP should only be used when additional yeast-assimilable nitrogen is required.

Wine, cider, mead and sugar-based fermentations are more likely to benefit because their natural nitrogen levels can be low. Standard all-malt beer wort often contains sufficient nutrients without a separate DAP addition.

Excessive nutrient additions may cause overly rapid fermentation, increased heat production or residual nutrients in the finished product.

How Should DAP Be Stored?

Keep the package sealed and store it in a cool, dry location away from moisture, direct sunlight and strong odours.

Always use clean, dry equipment when measuring the product and reseal the package immediately after use.
