Clean American West Coast Ale Yeast
LalBrew BRY-97 is a clean, highly attenuative American West Coast ale yeast selected for brewing hop-forward ales with a neutral fermentation profile and excellent clarity.
Its restrained ester production allows hop flavour, aroma and bitterness to remain at the centre of the finished beer. BRY-97 also expresses a beta-glucosidase enzyme that can promote hop biotransformation and help accentuate hop flavour and aroma.
It is an excellent choice for American pale ales, West Coast IPAs, American amber ales, cream ales, stouts and other clean-fermented American beer styles.

BRY-97 produces a predominantly neutral fermentation profile with mild ester character.
Its clean flavour allows citrus, tropical fruit, pine, resin and stone-fruit characteristics from modern hop varieties to remain prominent. This makes BRY-97 particularly useful for hop-forward pale ales and IPAs where yeast character should support rather than overpower the hops.
How Much BRY-97 Should I Use?
Lallemand recommends a pitching rate of approximately 50–100g per 100 litres of wort.
One 11g sachet is generally suitable for a standard-strength home brew batch of approximately 20–23 litres. Higher-gravity, high-adjunct or otherwise stressful fermentations may require additional yeast and suitable yeast nutrient.

BRY-97 can be pitched directly into the wort without rehydration.
